Ingredients
  • 500g lean beef steakcut into 3cm dice
  • 1tbsp olive oil
  • 1 large red onionpeeled and finely diced
  • 1 large carrotpeeled and finely diced
  • 1 celery stickfinely diced
  • ½ red capsicumchopped
  • 2tsp Minced Garlic
  • 3sprigs fresh thymeleaves only
  • 3 large mushroomsdiced
  • Salt and pepper
  • 2tbsp plain wholemeal flour
  • 2tbsp tomato pasteor use tomato sauce
  • 1tbsp Worcestershire Sauce
  • 1 ½cups beef stock
  • ½cup red wineor use more beef stock
  • 1 sheet puff pastry
  • 1tbsp milkfor brushing pastry
Instructions
  1. Preheat your oven to 150C.
  2. Heat the olive oil in a large frying pan over med/high heat.
  3. Brown the beef until golden, set aside.
  4. In the same pan, cook the onion, carrot, capsicum celery and garlic for 4-5 minutes.
  5. Add the thyme and the mushrooms and cook for a further 2 minutes.
  6. Season to taste and then add the flour and tomato paste, stirring well for 1 minute.
  7. Place the beef back into the pan and add the wine, stock and Worcestershire sauce.
  8. Bring to the boil, then reduce the heat to low and cover.
  9. Bake in the oven for 90 minutes.
  10. Remove the pastry sheet from the freezer and allow to thaw on the bench.
  11. Increase the heat of the oven to 190C.
  12. Place the beef filling into a pie dish (or use a deep cake tin) and cover with the pastry, tucking into the sides.
  13. Brush the top with milk and bake in the oven for around 25 minutes or until golden brown on top.
