Ingredients
  • 320grams of lean turkey mince
  • 1/3cup rolled oats
  • 1teaspoon dried Italian herbs
  • Pepper
  • 2 grated carrots
  • 1teaspoon extra virgin olive oil
  • 2 red onionspeeled
  • 4 wholegrain rolls
  • 1 avocado
  • 2cups baby spinach
Instructions
  1. Combine the turkey mince, oats, herbs, pepper and grated carrot. Use a spoon or your hands to combine the mixture well.
  2. Shape into a patty per serve, place on a plate, cover and let rest in the fridge for 30 minutes
  3. Heat a non-stick fry pan over a low-medium heat and add the oil. Slice the onion into rounds and place in the pan, using a wooden spoon to stir occasionally. Cook for 8-10 minutes until soft and caramelised. Remove from the pan and set aside.
  4. Increase heat in pan to medium-high. Place the turkey patties into the pan and cook on each side for 7 minutes or until thoroughly cooked.
  5. Slice open the bread rolls and spread one half per serve with avocado. Top with spinach, turkey patty, onions and remaining roll half to serve.
