Honey Soy Chicken Veggie Noodle Bowls

Ingredients
  • 450grams fresh hokkien noodles
  • 2tbsp soy saucesalt-reduced
  • 2tsp honey
  • 1tbsp sesame seeds
  • 1 carrotpeeled into ribbons
  • 1/2 cucumberpeeled into ribbons
  • 1 red capsicumthinly sliced
  • 200grams cooked chickenshredded with a fork
Instructions
  1. Cook fresh hokkien noodles following packet directions. Rinse under cold water to refresh.
  2. In a small microwave safe bowl whisk together honey, soy and sesame seeds.
  3. Heat in the microwave for a few seconds until honey is warmed through. Remove from the microwave and whisk again until honey is dissolved.
  4. Toss noodles, carrot, cucumber, red capsicum, and shredded chicken together. Drizzle over dressing and toss to combine.
  5. Tip: The addition of seeds to this recipe adds great nutritional value. Seeds are a great protein source (as well as a source of fibre, fat soluble vitamins and a host of minerals) for children who prefer not to eat meat. They can be added to main meals or eaten on their own as a snack.
