Ingredients

pitted dates
soaked in boiling water for at least 15 minutes then drained

cup
desiccated coconut
1
tsp
vanilla extract

tbsp
fresh lemon juice
2
tsp
refined coconut oil
liquified
Instructions
Blitz everything together until well combined.
Press into lined pan (I used a loaf pan)
Pop in the fridge or freezer to set
Can be stored in fridge or freezer
*If you fancy a little bit more sweetness than the dates give, feel free to add a dash of maple syrup, honey etc.
