Ingredients
  • 3/4cup pitted datessoaked in boiling water for at least 15 minutes then drained
  • 1cup desiccated coconut
  • 1tsp vanilla extract
  • 3tbsp fresh lemon juice
  • 2tsp refined coconut oilliquified
Instructions
  1. Blitz everything together until well combined.
  2. Press into lined pan (I used a loaf pan)
  3. Pop in the fridge or freezer to set
  4. Can be stored in fridge or freezer
  5. *If you fancy a little bit more sweetness than the dates give, feel free to add a dash of maple syrup, honey etc.
  6. Enjoy
