Ingredients
Cupcakes
  • 150grams light sour cream
  • 50g unsalted buttermelted
  • 1tablespoon grated lime rind
  • 1tablespoon desicated coconut
  • 1tablespoon fresh lime juice
  • 1/4cup honeyor sweetener of choice
  • 1 egg
  • 1.5cups wholemeal self raising flour
  • Olive oil spray
Icing
  • 1/4 tub light sour cream
  • 2tablespoons honey
  • 1tablespoon grated lime rindto decorate
Instructions
Cupcakes
  1. Place all ingredients into a bowl and use electric beaters to mix for 1 minute.
  2. Spoon into cupcake trays that have been sprayed with olive oil (or use cupcake cases).
  3. Bake at 160C for 12-15 mins
Icing
  1. Mix together and dollop a small amount on top just before serving, once the cupcakes have fully cooled.
  2. Grate a bit of lime zest on top for decoration
