Ingredients
  • 2 chicken breastseach cut in half lengthways to make 4 pieces
  • 1/2cup wholemeal breadcrumbs
  • Zest of ½ a lemon
  • 1/3cup finely grated Parmesan cheese
  • 4tbsp chopped parsley leaves
  • 2tbsp olive oil
  • Salt and pepper
  • 1 egglightly beaten
Instructions
  1. Heat your oven to 200C and line a tray with baking paper.
  2. Place the breadcrumbs, lemon, cheese, parsley and oil in a bowl. Season to taste.
  3. Place the egg into another bowl.
  4. Dip the chicken pieces one at a time into the egg, and then into the breadcrumb mix. Ensure an even coating.
  5. Place on the tray and bake until golden brown, around 30 minutes. Turn half way through.
