Ingredients
  • 1.5cups wholemeal self raising flour
  • 0.75tsp salt
  • 1cup coconut sugar
  • 0.25tsp cinnamon
  • 2 eggswell beaten
  • 0.5cup coconut oilmelted
  • 0.5cup light coconut cream
  • 0.5tsp vanilla essence
  • 1/2cup fresh or tinned peacheschopped
  • cooking oil spray
Instructions
  1. Preheat oven to 180C and spray 12 muffin tins with cooking oil.
  2. In a large mixing bowl, combine the flour, salt, sugar and cinnamon.
  3. Make a well in the centre; add the eggs, oil, coconut cream and vanilla. Stir lightly until dry mixture is moistened.
  4. Pour batter evenly into the muffin tins.
  5. Push a piece of peach into each muffin.
  6. Bake for 18 minutes or until a skewer inserted into the centre comes out clean.
  7. Cool in the tray before placing on a wire rack to cool completely.
  8. Store in an airtight container, or wrap the cold muffins individually to freeze.
