Pesto Crusted Lamb with Potatoes & Greens

Lamb and vegetables

lamb backstrap fillet

Instructions
Preheat oven to 220C.
Place all pesto ingredients into food processor and blitz for 1 minute until paste forms.
Place sliced potato into microwave safe dish, microwave on high for 1 minute.
Toss potato slices in ½ tbsp olive oil.
Place potatoes on lined baking tray and bake for 10 minutes.
Heat fry pan with remaining ½ tbsp. olive oil and sear lamb on both sides.
Remove tray from oven with potatoes and place lamb on tray with potatoes brushing both sides of the lamb with pesto.
Return tray back to oven for 5-10 minutes, 5 minutes for med/rare, 10 minutes for med/well lamb.
Steam vegetables while lamb is in the oven.
Slice cooked lamb and serve with steamed greens and potatoes.
