Quick and Easy Chorizo and Broccoli Couscous

Ingredients
  • 1 1/2cups couscous
  • 1head broccolicut into bite size pieces
  • 1/2 Spanish chorizodiced
  • 1/2tsp garlic
  • 1 capsicumsliced
  • 1tbsp olive oil
Instructions
  1. Cook couscous per packet instructions.
  2. Heat fry pan on medium heat add ½ tbsp olive oil and sauté capsicum and garlic for 4 minutes.
  3. Add chorizo to pan and sauté until browned.
  4. Steam broccoli.
  5. Mix all cooked ingredients together in bowl drizzle with remaining olive oil and season with salt and pepper.
  6. Serve and enjoy.
  7. Store in air tight container in fridge for up to days.
