Ingredients
  • 1 eggwhisked
  • 1/4cup unsweetened almond milk
  • 1teaspoon vanilla extract
  • 1 limejuiced and zested
  • 1teaspoon coconut oilmelted
  • 1tablespoon honey
  • 2tablespoons Greek yoghurt
  • 1cup self raising flour
  • 1/2teaspoon baking powder
  • 1/4cup shredded coconut
  • 1/2cup fresh or frozen raspberries
Instructions
  1. Preheat oven to 180C.
  2. Combine egg, almond milk, vanilla extract, lime juice, lime zest, coconut oil, honey and yoghurt and mix well.
  3. Sift flour and baking power over the top of the milk mixture and combine gently.
  4. Stir in coconut, and then gently fold in raspberries.
  5. Spoon into mini muffin cases and pop in the oven for 10 minutes or until cooked through.
