Ingredients
  • 1/2cup brown riceuncooked
  • 1tablespoon red curry paste
  • 1teaspoon extra virgin olive oil
  • 1/4 brown onionchopped
  • 2 potatopeeled and cubed
  • 200grams tinned tomatoes
  • 1cup water
  • 200grams white fish fillet of choice
  • 2cups cauliflower
  • 90grams tinned brown lentils
  • 2tablespoons reduced-fat Greek natural yoghurt
  • 2tsp chopped parsley leaves
Instructions
  1. Prepare rice as per packet directions
  2. In a saucepan, over a medium heat add oil. Once hot, add curry paste and onion.
  3. Stir continuously for 1-2 minutes, or until aromatic and onion begins to soften.
  4. Add potato, stir to coat. Add tomatoes and water. Cover and allow to simmer for 5 minutes.
  5. Chop cauliflower into florets and fish into cubes. Rinse and drain lentils. Add to the saucepan, cover and allow to simmer for a further 5 minutes.
  6. Remove the lid and allow liquid to reduce for a further 5-7 minutes.
  7. Serve curry with rice, a dollop of yoghurt, and the parsley.
