Ingredients
  • 3cups rocketor try baby spinach
  • 1cup fresh coriander leaves
  • 2 ripe avocadospeeled and finely sliced lengthways
  • 1/4cup slivered almondsor any nuts you have on hand
  • 3tbsp dried cranberries
  • 2tbsp olive oil
  • Juice of ½ a lemon
  • 1tsp grainy mustard
  • Salt and pepper to taste
Instructions
  1. Make the dressing by combining the oil, lemon juice and mustard. Set aside.
  2. Place the rest of the ingredients into a salad bowl and drizzle with the dressing.
  3. Season to taste and serve.
