Savoury Mince with Sweet Potato Mash

Ingredients

sweet potato
peeled and diced

lean beef mince

crushed garlic

grated

zucchini
grated

tinned crushed tomatoes

frozen peas
Salt and pepper

broccoli
cut into small florets
Instructions
Bring a large pot of water to the boil.
Carefully add the sweet potato and boil for 15 minutes or until soft.
Drain sweet potato and return to pot, season with salt and pepper. Add 2 tbsp water and mash until smooth.
Heat olive oil in large frypan on high heat.
Add beef mince and garlic to the pan, season well and sauté until browned.
Add grated vegetables, tinned tomatoes and peas to pan.
Simmer for 10 minutes. Steam the broccoli in the microwave or on the stovetop.
Serve the mince with mashed sweet potato and steamed broccoli.
Store in an airtight container in refrigerator for 4 days or freeze for up to 3 months.
