Sesame Ginger Soba Noodle Soup

    Ingredients
    • 200grams tinned cannellini beans
    • 1tsp sesame oil
    • 1tsp fresh gingergrated
    • 1clove garlicpeeled and diced
    • 2heads bok choytrimmed and chopped
    • 3cups liquid vegetable stocksalt reduced
    • 50grams soba noodles
    • 2tsp black or white sesame seeds
    Instructions
    1. Rinse and drain cannellini beans.
    2. Heat sesame oil in a saucepan over medium-high. Add ginger and garlic and sauté for 1 minute. Add bok choy and cannellini beans and stir together for another minute.
    3. Add the vegetable stock and soba noodles and bring to the boil. Reduce to a simmer for 5 minutes or until noodles are heated through.
    4. Pour into a bowl and sprinkle with sesame seeds to serve.
