Ingredients
  • 500g diced pumpkin
  • 60g dried lentilscook per packet instructions first
  • 1tin diced tomatoes
  • 1tbsp coconut oil
  • 1tsp smoked paprika
  • 1tsp cumin
  • 1tsp ground coriander
  • 1sprig spring onion
  • 50g chorizo slicedI buy it pre-sliced
  • 1tsp Minced Garlic
  • 1/2tsp Minced Ginger
  • 1/2-1tsp ground chilli
  • 1tbsp finely grated Parmesan
Instructions
  1. Toss cubed pumpkin in garlic & coconut oil roast in oven until tender
  2. In large pot crisp up the chorizo (don’t add any extra oil)
  3. Add the pre cooked lentils, diced tomatoes, spices, ginger & garlic simmer on low heat for 5 minutes
  4. Gently mix in roasted pumpkin and simmer for a further 2 minutes
  5. Sprinkle some fresh chopped spring onions on top and some finely grated Parmesan
