Steak with Beetroot, Walnut & Feta Salad

Ingredients
  • 300grams lean beef
  • salt
  • Pepper
  • 2tsp extra virgin olive oil
  • 6 baby beetrootstinned
  • 2cups rocket lettuce
  • 2tbsp reduced fat fetacrumbled
  • 2tbsp walnutschopped
  • 2tsp balsamic vinegar
Instructions
  1. Bring the steak to room temperature before cooking.
  2. Season with salt and pepper.
  3. Heat oil in a frypan over medium-high heat and add steak. Cook for 4-5 minutes each side or until cooked to your liking. Can also be cooked on a preheated barbecue plate. Once steak is cooked, remove from heat and set aside to rest.
  4. Prepare the salad by draining the beetroots and chopping in half.
  5. Place rocket on a serving bowl and top with beetroot, crumbled feta and walnuts. Drizzle with balsamic.
  6. Once steak has rested, slice and place on top of salad to serve.
