Heat a frypan over medium-high heat. Spray steak with cooking oil spray and season with pepper. Cook for 3-4 minutes each side until cooked to your liking. Move steak to a clean plate to rest, reduce heat on pan to medium.
Spray pan once more with cooking oil spray – no need to wipe out – and add onion. Sauté for 3 minutes until tender. Add garlic and mushrooms and cook a further 2 minutes.
Add red wine and cook for a minute to burn off the alcohol. Add stock and cornflour mixture and cook for 3 minutes until thick and shiny. Stir through any juices from resting the steak.
While steak and sauce are cooking steam the veggies – starting with sweet potato then adding cauliflower and broccoli towards the end.
