Ingredients
  • Olive oil spray
  • Pepper
  • 1/2 brown onionchopped
  • 2cloves crushed garlic
  • 1cup sliced mushrooms
  • 1tablespoon corn flour
  • 2tablespoons water
  • 1/2cup red cooking wine
  • 1/2cup liquid beef stocksalt reduced
  • 200grams lean sirloin steak
  • 1cup cauliflower
  • 1cup broccoli
  • 1 sweet potatopeeled and sliced
Instructions
  1. Combine cornflour and water in a dish, set aside.
  2. Heat a frypan over medium-high heat. Spray steak with cooking oil spray and season with pepper. Cook for 3-4 minutes each side until cooked to your liking. Move steak to a clean plate to rest, reduce heat on pan to medium.
  3. Spray pan once more with cooking oil spray – no need to wipe out – and add onion. Sauté for 3 minutes until tender. Add garlic and mushrooms and cook a further 2 minutes.
  4. Add red wine and cook for a minute to burn off the alcohol. Add stock and cornflour mixture and cook for 3 minutes until thick and shiny. Stir through any juices from resting the steak.
  5. While steak and sauce are cooking steam the veggies – starting with sweet potato then adding cauliflower and broccoli towards the end.
  6. Serve steak and veggies with sauce.
