Ingredients
  • 400g diced chicken breast
  • 90g rice noodles
  • 2cloves crushed garlic
  • 3 finely chopped spring onions
  • 4cups mixed lettuce leaves
  • 4cups snow peas, trimmed
  • 1/2 carrot grated
  • 1 lemonjuiced
  • 2tbsp oyster sauce
  • 1tbsp fish sauce
  • 1tbsp soy sauce or tamari
  • 1 green apple, sliced
  • Coconut oil or vegetable oil spray
Instructions
  1. Cook diced chicken breast and garlic over a medium heat in cooking spray until cooked through.
  2. Meanwhile, place vegetables in a large bowl with lemon juice and sauces.
  3. Add chicken to salad, stir through and set aside for flavours to infuse.
  4. Cook noodles as per packet instructions. Rinse in warm water and stir through salad.
  5. Add apple slices and drizzle with any remaining lemon juice
