Veggie Packed Bolognese with Chargrilled Capsicum Sauce

Ingredients
  • 1 carrotgrated
  • 1cup spinachchopped
  • 1/2bunch basilchopped
  • 500grams extra lean beef mince
  • 400grams diced tomatoestinned
  • 2tbsp tomato paste
  • 1.5 red capsicumsdiced
  • Salt and pepperto taste
  • 1tsp garliccrushed
  • 1tsp smoked paprika
  • 1tbsp extra virgin olive oil
  • 3 zucchinisspiralised to create zucchini noodles (or use a vegetable peeler to make thin strips)
Instructions
  1. Heat olive oil in large fry pan.
  2. Add capsicum and sauté until charred.
  3. Add mince, garlic, paprika and basil and cook on high until mince is browned.
  4. Add grated carrot, tinned tomatoes and tomato paste.
  5. Simmer on low heat for 15 minutes.
  6. Add chopped spinach and mix through until wilted.
  7. Serve on top of raw zucchini spirals.
