Ingredients
  • 1cup brown riceuncooked
  • 600grams firm tofu
  • 1 brown onionsliced
  • 1tbsp fresh gingerminced
  • 4cloves garlicminced
  • 2tbsp water
  • 2tsp honey
  • 2tsp coconut oil
  • 1 red capsicumsliced
  • 2cups broccoli
  • 4cups green beanstrimmed
  • 2 carrotsliced
  • 2tsp sesame seedsblack or white
  • 1/3cup unsalted cashew nutschopped
  • 1/3cup fresh corianderchopped
Instructions
  1. Prepare rice according to packet directions. Cut tofu into cubes.
  2. Combine ginger, garlic, honey and water in a bowl and mix well. Add tofu and stir to coat.
  3. Heat oil in fry pan over medium-high heat. Add onion, capsicum, broccoli florets, beans and carrot and stir fry for 3-5 minutes or until tender crisp.
  4. Add tofu and marinade and stir fry for a further 1-2 minutes to combine flavours and heat tofu.
  5. Combine prepared rice with sesame seeds, cashews and coriander and serve alongside tofu and vegetable stir fry.
