Instructions
Prepare rice according to packet directions. Cut tofu into cubes.
Combine ginger, garlic, honey and water in a bowl and mix well. Add tofu and stir to coat.
Heat oil in fry pan over medium-high heat. Add onion, capsicum, broccoli florets, beans and carrot and stir fry for 3-5 minutes or until tender crisp.
Add tofu and marinade and stir fry for a further 1-2 minutes to combine flavours and heat tofu.
Combine prepared rice with sesame seeds, cashews and coriander and serve alongside tofu and vegetable stir fry.
