  • 4 crumpetswholemeal
  • 2cups mixed berriesfresh or frozen
  • 1/3cup orange juice
  • 1teaspoon vanilla extract
  • 1/3cup slivered almonds
  • 1/3cup reduced-fat Greek natural yoghurt
Instructions
  1. Place berries, orange juice and vanilla into a microwave-safe bowl and microwave for 2- 3 minutes or until berries have collapsed and liquid is reduced.
  2. Toast crumpet.
  3. Place berry compote over crumpet and garnish with a dollop of yoghurt and slivered almonds.
