Wholemeal Sweet Potato Bread

Ingredients
  • 400g sweet potatoes
  • 4large free-range eggs
  • 1/4cup olive oil
  • 2tsp baking powder
  • 1.5cups wholemeal self raising flour
  • 1/4cup pumpkin seeds(pepitas)
  • 1/4cup sunflower seeds
Instructions
  1. Preheat oven to 200C.
  2. Wrap the sweet potatoes in foil and bake for 30-40 minutes or until soft.
  3. Remove the foil and rub off some of the skin.
  4. In a bowl, mash the sweet potato with a fork. Add remaining ingredients and stir well.
  5. Transfer mixture to a large lined loaf tin and bake for 1 hour.
  6. When cool, slice loaf into 16 pieces. Freeze leftover slices and defrost as needed.
  7. Serve bread spread with cream cheese, avocado or a seed butter. Or for a sweet topping, mix together a little maple syrup or honey with some cream cheese.
