Instructions
Grease and line a 25cmx25cm baking tray.
Blitz the 200g of coconut, 500g of apricots and 100g of dates in a food processor until well combined.
Press mixture firmly into baking tray and refrigerate for approximately 1 hour.
Cut into 80 small squares and coat them with the additional desiccated coconut, if using.
