Preheat the oven to 200°C and spray two 20cm cake tins with cooking oil spray.
Heat a large frying pan over medium-high heat and add mince, garlic, herbs, onion, carrot and zucchini. Cook for 3-5 minutes or until mince is browned and vegetables are soft.
Add diced tomatoes, tomato paste and season with salt and pepper. Cook for 5-10 minutes or until the sauce starts to reduce.
Add pasta to the frying pan and stir through.
Pour bolognese mix into prepared tins and top evenly with mozzarella cheese.
Bake in the oven for 10-15 minutes or until the cheese is melted and golden.
Divide each tin into 4 serves. Leftovers can be stored in an airtight container for3-4 days.
