Ingredients
  • 100grams chicken thighs
  • 1tsp fresh lemongrassminced
  • 1clove garlicminced
  • 1/2tsp chilli flakes
  • cooking oil spray
  • 1cup rocket lettuce
  • 1/2cup purple cabbagefinely shredded
  • 1/2 spring onionfinely sliced
  • 1/4red capsicumsliced
  • 1/4cup corn kernalsfresh or tinned
  • 1tbsp cashew nutsunsalted, chopped
  • 2tbsp reduced-fat Greek natural yoghurt
  • 1tsp extra virgin olive oil
  • 1 tbsp kimchi
Instructions
  1. Combine chicken with lemongrass, garlic and chilli flakes. Set aside for a few minutes to marinade.
  2. Heat a frying pan over medium-high heat and lightly spray with cooking oil spray. Add the chicken and marinade and cook for 3 to 4 minutes on each side or until cooked through.
  3. Combine rocket, cabbage, spring onion, capsicum, corn and cashews.
  4. Combine yoghurt and olive oil.
  5. Place chicken on top of salad, dollop with the yoghurt mix and top with kimchi to serve.
