Ingredients
  • 1 large single chicken breastcut into bite size pieces
  • 200g rice noodles
  • 1tbsp olive oil
  • 1 large brown onion
  • 2 garlic clovespeeled and finely diced
  • 1tsp freshly chopped chillito taste
  • Thumb sizepiece gingerpeeled and finely diced
  • 1 red capsicumde-seeded and cut into strips
  • 1cup green beanstrimmed
  • 1cup bean sprouts
  • Juice of 1 lime
  • 1tbsp honey
  • 3tbsp soy sauce
  • Fresh coriander or basilto serve
  • Lemon wedgesto serve
  • Handful of cashewsto serve
Instructions
  1. Cook noodles according to packet directions. Set aside to drain.
  2. Set a large frying pan over med/high heat.
  3. Heat the olive oil and then add the garlic, ginger and chilli, stir for 30 seconds.
  4. Add the onion and cook for 5 minutes.
  5. Pour in the chicken pieces and stir fry until golden on the outside and cooked through.
  6. Add the capsicum, bean sprouts and green beans, followed by the lime, honey and soy sauce. Toss to coat.
  7. Mix the noodles through the stir fry.
  8. Serve with the cashews, fresh herbs and lemon wedges.
