Ingredients
  • 3/4cup cashews(for best results soak in water for approx 4 hours then drain)
  • 1/2cup coconut
  • 1/2cup almond meal
  • 1/4cup frozen raspberries
  • 6 dried dates
  • 1tsp mint essence
  • 1tsp vanilla
  • 1tsp water
  • 2tbsp cocoa
Instructions
  1. Blitz cashews, coconut and almond meal
  2. Add raspberries, dates, mint, vanilla and water and blitz until well combined
  3. This is a very sticky mixture – it is best to place the mixture in the freezer for up to 30 minutes before rolling into balls.
  4. Roll into balls and then sift the cocoa on top (optional). Place in fridge or freezer to set.
  5. Can be stored in fridge or freezer.
