Ingredients
  • 1cup gluten free plain flour120g
  • 1tsp baking powder2.5g
  • 1/2cup cocoa powder50g
  • 3/4cup coconut sugar150g
  • salt2.5g
  • 2/3cup salted butter, melted166.6g
  • 1tbsp vanilla essence20ml
  • 1/2cup dark chocolate chips60g
  • 1 egg whisked50g
Instructions
  1. Preheat oven to 180C and line a baking tray with baking paper
  2. In a large mixing bowl combine all ingredients, mix until well combined
  3. Scoop generous teaspoon-sized balls, roll and place onto prepared tray, lightly press but not flatten each biscuit. Ensure you leave space between each cookie.
  4. Bake in the oven for 8-10 minutes or until the edges start to crisp
  5. Remove from the tray and place biscuits on a wire rack to cool
  6. Allow cookies to fully cool before serving
  7. Leftovers can be stored in an airtight container in the fridge for 4-5 days
