Ingredients
  • 1cup pitted datessoaked in boiling water for 15 minutes
  • 3/4cup walnuts
  • 2tablespoons cacao
  • 1teaspoon vanilla extract
  • 1tablespoon honey
  • 1/3cup desiccated coconutplus 1 tablespoon for rolling
Instructions
  1. Blitz all ingredients together until well combined (minus extra coconut for rolling).
  2. Mixture is quite sticky at this point so if you have time, pop it in the freezer for 10 minutes before rolling.
  3. Roll mixture in balls then coat in coconut.
  4. Place in fridge or freezer to set.
  5. Store in fridge or freezer in an airtight container.
