Ingredients
  • 1/2cup pitted dates
  • 1/4cup boiling water
  • 1.5cups cashews
  • 2tbsp cacao powder
  • 2serves Healthy Mummy chocolate whey proteinor use Healthy Mummy chocolate smoothie powder
  • 1tbsp coconut oilmelted
  • 1/4cup mini dark chocolate chipsplus extra to decorate (optional)
Instructions
  1. Soak dates in boiling water for 5-10 minutes.
  2. Place cashews in food processor and blitz on high until they resemble bread crumbs.
  3. Add dates and water to cashews in food processor, blitz for 10 seconds until combined.
  4. Add remaining ingredients and blitz on high until combined.
  5. Transfer mixture into bowl and place in freezer for 15 minutes for mix to firm.
  6. Roll into 16 balls.
  7. Press the extra choc chips into the top of each ball to decorate.
  8. Store in airtight container in refrigerator for up to 5 days.
