Ingredients
  • 150grams of chicken breast fillets
  • 1 small head bok choy150 grams
  • cooking oil spray
  • 1tablespoon laksa paste store-bought20 grams
  • 1 1/4cups liquid chicken stocksalt reduced
  • 30grams coconut cream312.5 mls
Instructions
  1. Cut chicken into thick strips. Trim and chop bok choy.
  2. Heat a saucepan over medium-high heat and lightly spray with cooking oil spray.
  3. Add laksa paste and cook for a minute or so, then add stock. Bring to the boil. Add chicken and simmer for 5 minutes until cooked through. Add coconut cream and bok choy. Simmer for a few more minutes to cook the boy choy then serve.
