Ingredients
  • 1/2cup almond meal
  • 4 pitted datessoaked in hot water for 5 mins
  • 1tbsp natural peanut butter
  • 1tbsp chia seeds
  • 1tsp vanilla extract
  • 1/4cup desiccated coconutfor rolling
Instructions
  1. Place soaked dates (minus the water) and all other ingredients (except coconut) into your food processor and process until combined
  2. The mixture will go all crumbly, add a tiny bit of water and process again
  3. The mix will remain crumbly but it will be sticky
  4. Roll into small bite sized balls and roll in the desiccated coconut
  5. Store in the fridge in an airtight container
