self raising wholemeal flour

100% pure maple syrup

Instructions
Preheat oven 180C
Skin and cut pumpkin into large cubes. Place on baking tray and drizzle with 1/2 tbsp coconut oil
Roast pumpkin for 30 minutes until tender – once cooked, allow it to cool slightly
Mash the cooked pumpkin, add the remaining ingredients to it and whisk well
Pour the mix into a lined loaf tin and bake for 30 minutes or until golden and centre is firm
Allow to cool before slicing
