Ingredients
  • 300grams pumpkin
  • 2 1/2tbsp coconut oilmelted
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1cup self raising wholemeal flour
  • 1tsp baking powder
  • 3tbsp 100% pure maple syrup
  • 1/2tsp Sea salt
  • 1/4cup milk of choice
Instructions
  1. Preheat oven 180C
  2. Skin and cut pumpkin into large cubes. Place on baking tray and drizzle with 1/2 tbsp coconut oil
  3. Roast pumpkin for 30 minutes until tender – once cooked, allow it to cool slightly
  4. Mash the cooked pumpkin, add the remaining ingredients to it and whisk well
  5. Pour the mix into a lined loaf tin and bake for 30 minutes or until golden and centre is firm
  6. Allow to cool before slicing
