Ingredients

almond meal

rolled oats

cup
desiccated coconut
+ 2 tbsp for rolling

fresh lemon juice

tbsp
honey

tsp
vanilla extract
Instructions
Blitz almond meal, oats and 1/2 cup coconut.
Add lemon juice, honey and vanilla extract and blitz again until well combined.
Roll into 10 balls then coat in the 2 tbsp coconut.
Place in the fridge to firm up.
Can be stored in the fridge in an airtight container.
