Ingredients
  • 1/4cup tinned brown lentils50 grams
  • 1/2tsp extra virgin olive oil2.5 mls
  • 1/4 brown onion25 grams
  • 1 clove garlic3 grams
  • 1/2 red capsicum50 grams
  • 125grams tinned tomatoes
  • 1/4teaspoon chilli powder0.3 grams
  • 1/4teaspoon smoked paprika0.3 grams
  • 1/4teaspoon ground cumin0.3 grams
  • 1/4cup brown rice, uncooked40 grams
  • 1/4teaspoon salt0.3 grams
  • Pepper
Instructions
  1. Cook rice according to packet directions. Drain and rinse tinned lentils.
  2. Finely chop the onion, add to a saucepan with the oil and sauté for 3–4 minutes until translucent.
  3. Crush in the garlic and cook for another minute or so.
  4. De-seed and chop the capsicum. Then add to the pan together with the spices and sauté for another minute.
  5. Add tomato, lentils and salt to the pan and simmer for 5-10 minutes until starting to thicken.
  6. Season with pepper.
  7. Serve chilli in a bowl with the rice.
