Ingredients
  • 1/3cup pitted dates
  • 1.5cups rolled oats
  • 2tbsp peanut butter
  • 1tbsp honey
  • 1tbsp cacao
  • 1scoop Healthy Mummy Protein powderor Healthy Mummy smoothie mix
  • 100ml boiling water
  • 1tbsp crushed peanuts
Instructions
  1. Soak dates in boiling water for 5 minutes.
  2. Place oats, 1 tbsp peanut butter, honey, cacao, protein powder and soaked dates (including water) into a food processor and blitz on high speed until well combined.
  3. Transfer mix into a bowl and roll into 14 balls.
  4. Place in fridge for 2 hours or freezer for 30 minutes to set.
  5. Once set cut each ball in half and spread a little of the remaining peanut butter on one side and stick each ball back together.
  6. Roll in crushed peanuts or extra cacao.
  7. Store in an airtight container in the fridge for up to 7 days.
