1cupplain wholemeal flour(or spelt, rye or white flour)

Oil or butterfor cooking.
Instructions
Combine egg, flour and milk, and whisk until smooth (or blitz in a blender). Set aside to rest for 5 minutes.
Heat a frying pan over a medium heat, not too hot. Add a little oil or butter to coat the pan.
If making crepes, pour in approximately 3 tbsp of mixture and swirl around the pan to the edges. If making pikelets, pour in 1 tbsp of mixture per pikelet.
Place pan back onto the heat and wait for bubbles to form on the outside rim. When the bubbles have formed on 60 per cent of the crepe/pikelet, flip and cook the other side briefly. Repeat with remaining batter.
