Ingredients
  • 500grams chicken mince
  • 1tbsp oyster sauce
  • 1tbsp soy sauce
  • 1tsp grated ginger
  • 2tbsp corianderchopped
  • 1tsp Chillifinely chopped
  • 1/4cup quinoa flakes
  • 1tbsp sesame oil
  • 1/4cup sesame seeds
  • 300grams sweet potato cubed
  • 200grams green beans
  • 200grams broccoli
Instructions
Chicken meatballs
  1. Preheat the oven to 200C and line a tray with baking paper.
  2. Place mince, oyster sauce, soy, ginger, coriander, chilli, and quinoa flakes into food processor and blitz on high until combined.
  3. Roll into tablespoon size balls and roll each ball in sesame seeds, placing onto the baking tray. You should be able to make around 24 meatballs.
  4. Drizzle with the sesame oil and then cook for 5 minutes, turn over and cook for a further 5 minutes.
Sweet potato mash
  1. While the meatballs are cooking, prepare your sides.
  2. Place sweet potato in pot of boiling water and cook until tender.
  3. Drain the sweet potato and mash with two tablespoons of hot water until smooth.
Greens
  1. Steam the beans and broccoli on the stovetop or in the microwave until tender.
  2. Serve five or six small meatballs per person along with the mash and greens.
