Ingredients
For the muffin
  • 1cup wholemeal self raising flour
  • 1tbsp 100% pure maple syrup
  • 1 egg
  • 1/2cup milk of choice
  • 3/4cup natural Greek yogurt
  • 1cup frozen raspberries
  • 1scoop Healthy Mummy vanilla whey proteinoptional
For the crumble
  • 1/2cup rolled oats
  • 1/4 cup desiccated coconut
  • 1/4cup water
  • 1tbsp coconut oilmelted
  • 1 applegrated
Instructions
  1. Pre heat oven 170c
  2. Place flour, egg, protein powder, yogurt, maple syrup and milk into mixing bowl and mix well
  3. Add raspberries and fold though
  4. Divide mix into lined muffin tray
  5. Place all crumble ingredients into bowl mix well then top each muffin with crumble mixture
  6. Gently press down crumble mixture with back of spoon
  7. Place muffin tray into oven and bake for 20-25 minutes until cooked through
  8. Allow to cool slightly before removing from tray and enjoy!
