Ingredients
  • 1 lemonzested finely
  • 2 lemonsjuiced
  • 1/4cup maple syrup
  • 1/2cup natural yoghurt
  • 1/4cup milk of choice
  • 1 egg
  • 1/2cup shredded coconut
  • 1cup wholemeal self raising flour
  • 1/2tsp bicarb sodaor baking powder
  • 25grams buttermelted
Instructions
  1. Preheat the oven to 180C and line a loaf tin with baking paper.
  2. Place lemon zest, lemon juice, maple syrup, yoghurt, milk and egg into a mixing bowl and whisk to combine.
  3. Add remaining ingredients and stir well until combined.
  4. Pour mixture into the lined tin and bake for 10-15 minutes or until golden and firm.
  5. Allow to cool slightly before slicing into 8 pieces.
