Instructions
Preheat the oven to 180C and line a loaf tin with baking paper.
Place lemon zest, lemon juice, maple syrup, yoghurt, milk and egg into a mixing bowl and whisk to combine.
Add remaining ingredients and stir well until combined.
Pour mixture into the lined tin and bake for 10-15 minutes or until golden and firm.
Allow to cool slightly before slicing into 8 pieces.
