Ashleigh has lost 12.5kg TWICE by following the 28 Day Weight Loss Challenge, and is a MASSIVE fan of meal prep!
The healthy mama shared her top tips on how to meal prep and made a variety of yummy, delicious food from our Challenge.
Ashleigh on Channel 9 talking about how she meal preps for her family
Mum-of-two Ashleigh Dunkley reveals she has to be mindful of what she’s cooking, as her hubby has coeliac disease – which means he is unable to eat food with gluten in it. Gluten can be found in wheat, rye, barley and oats.
But the mum-of-two says she never has to cook two meals for her family. Here’s how Ashleigh caters for a dietary requirement in her household…
“I have been a 28 Day Weight Loss Challenge member for three years, and in that time I have never cooked two separate meals,” she says.
“I can make a heap of recipes from the Challenge hub that my hubby can eat.”
Ashleigh says that a lot of food out there contains added gluten or flour to thicken it up, so she likes to make everything from scratch.
“This is why the Challenge is brilliant, as it’s all from scratch,” she says.
Ashleigh now coverts every recipe she makes into a gluten-free one.
“I use gluten free flour in place of regular flour in all my baking, so that my husband can eat everything. If I make pizza, the flour is gluten-free. I use buckwheat in place of barley, and in place of oats, I use gluten-free Weet-Bix.”

Zucchini and bacon slice
Get the family involved with meal prep to get them interested in the food they are eating and learn more about it with you. This recipe requires lots of grating – something older children may be able to help you with.

Two minute chocolate cake
This quick microwave chocolate cake is so easy to make. Cacao is high in nutrients such as magnesium and potassium and it also helps stimulate serotonin production in the brain.

Thermo wholemeal choc chip muffins
An easy to prepare and healthy muffin recipe. This recipe has been tested for use in a Thermomix. If using another type of cooker, cooking / prep times and ingredient quantities may need to be adjusted to work correctly.
This meal is 198 calories per serve and can also be found on the 28 Day Weight Loss Challenge.
Carrot and parmesan dip
Make this dip ahead of time and store in the fridge with some vegetables cut into baton so you a healthy snack whenever needed.
