“I spend Sunday afternoons doing a big cook up to get us through the week,” says Amanda.

“I love meal prepping because it sets me up with a positive mindset for the week because I’m organised and with a hubby who is a sparky, he may not get home until late.

“With a two and a half year old and a four year old, trying to cook dinner can be a nightmare.”

Vegetarian Satay Fried Rice x 2

Some satay recipes are high in salt and sugar, but making it yourself means you can keep everything in check.

This recipe is 433 calories per serve.

Amanda’s 14kg weight loss story

Amanda lost 14kg after the birth of her first daughter on the 28 Day Weight Loss Challenge before falling pregnant.

She then started the 28 Day Weight Loss Challenges at the end of August, and so far she’s lost 10.5kg.

“I’ve been on the Challenges two times now and they work so well for me,” says Amanda. “I credit meal prepping for helping me stay on track.”
