No bake coconut and almond bars

For an afternoon pick me up, don’t reach for a quick fix like a chocolate bar as the sugar high will soon lead to a crash in energy levels.

This recipe is packed with healthy fats from nuts and coconut, and sweetened with raisins for a nutritious boost of energy.

  • 3/4 cup almonds
  • 1/3 cup shredded coconut or desiccated
  • 1/3 cup raisins
  • 2 tsp coconut oil melted
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon

Instructions
  1. Line a loaf pan with baking paper and set aside.
  2. Blitz all ingredients together until well combined.
  3. Press into pan and pop in the freezer or fridge until set.
  4. Cut into 9 bars and store in freezer or fridge.
