No bake coconut and almond bars
For an afternoon pick me up, don’t reach for a quick fix like a chocolate bar as the sugar high will soon lead to a crash in energy levels.
This recipe is packed with healthy fats from nuts and coconut, and sweetened with raisins for a nutritious boost of energy.
The kids will love these after school too – they’re perfect for little hands.

- 3/4 cup almonds
- 1/3 cup shredded coconut or desiccated
- 1/3 cup raisins
- 2 tsp coconut oil melted
- 1 tbsp chia seeds
- 1/4 tsp cinnamon
Ingredients

- Line a loaf pan with baking paper and set aside.
- Blitz all ingredients together until well combined.
- Press into pan and pop in the freezer or fridge until set.
- Cut into 9 bars and store in freezer or fridge.
