This no bake date nut bars recipe is perfect for a healthy morning tea or to serve as an after-school snack for the kids.

Simply bring together in the food processor and then place in the pan to set in the freezer. Couldn’t be simpler!

  • 1/2 cup firmly packed dates pitted
  • 1/2 cup peanut butter
  • 1.5 cups rolled oats
  • 1 tsp vanilla extract
  • 2 tbsp rice malt syrup
  • 1 tbsp coconut oil melted

  • 1.5 cups rolled oats
  • 1 tsp vanilla extract
  • 2 tbsp rice malt syrup

Instructions
  1. Soak dates in boiling water for 10 minutes then drain.
  2. Line a 20cm x 20cm pan (or similar) with baking paper then set aside.
  3. Blitz all ingredients together until well combined. It may be a little crumbly but will come together in the next step. If too dry, add a little water.
  4. Press firmly into prepared tin then pop in the freezer to set.
  5. Once set, cut into 10 bars.
  6. Best kept in the freezer but can be kept in the fridge also.
