- 375 grams light smooth ricotta
- 1 sachet passionfruit and mango ‘Jelly Lite’ this is a low sugar jelly from Coles, Woolworths and IGA
- 1 fresh passionfruit to serve (optional)
Ingredients

- Empty contents of ONE sachet of jelly into a heatproof bowl and add 1 cup of boiling water. Stir until dissolved.
- Add 1 cup of cold water and stir.
- Add ricotta to the jelly mixture and stir well until smooth and well combined.
- Pour into silicone muffin moulds or greased ramekins.
- Pop into the fridge overnight to set.
- Keep stored in the fridge.
- Serve as is, or top with fresh passionfruit if desired.
