  • 1 sachet passionfruit and mango ‘Jelly Lite’ this is a low sugar jelly from Coles, Woolworths and IGA
  • 1 fresh passionfruit to serve (optional)

Instructions
  1. Empty contents of ONE sachet of jelly into a heatproof bowl and add 1 cup of boiling water. Stir until dissolved.
  2. Add 1 cup of cold water and stir.
  3. Add ricotta to the jelly mixture and stir well until smooth and well combined.
  4. Pour into silicone muffin moulds or greased ramekins.
  5. Pop into the fridge overnight to set.
  6. Keep stored in the fridge.
  7. Serve as is, or top with fresh passionfruit if desired.
