Spiced apple coconut mini muffins

Cassie says, “Another lunch box friendly snack for the kids (and big kids!). These have zero added sugar or sweeteners!
“With the natural sweetness of apple balanced with a massive flavour hit from the spices these little muffins will quickly become a regular meal prep Sunday hit!”
We think these muffins sound like a great option for next week’s meal plan. If you’ve got a couple of apples in the fruit bowl, you’ll probably have everything else you need already.

- 2 apples peeled
- 1.5 cups wholemeal self raising flour
- 1.5 tbsp coconut oil melted
- 1/2 cup shredded coconut
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 cup milk of choice
- 1 egg
- Preheat oven to 180C.
- Grate 1 apple and dice the other apple.
- Place all ingredients in a mixing bowl and mix well.
- Spoon mix into silicon mini muffin tray.
- Bake in oven for 10-15 minutes or until a skewer inserted into the centre comes out clean.
- Store in an airtight container.
