  • 1/2 cup corn kernels fresh or tinned
  • 1/4 avocado diced
  • 1 spring onion finely sliced
  • 1 tsp lemon juice
  • 1/4 tsp ground cumin
  • 1/2 tsp dried Italian herbs
  • cooking oil spray
  • 1 free range egg
  • 1 slice wholegrain bread of choice

  • 1/4 tsp ground cumin

  • 1 free range egg
  • 1 slice wholegrain bread of choice
Corn Salsa With Egg
Instructions
  1. Combine corn with diced avocado, sliced spring onion, lemon juice, cumin and Italian herbs.
  2. Lightly spray a frypan with cooking oil over medium-high heat and fry egg to your liking.
  3. Toast bread and top with egg and salsa to serve.
