  • 2 oranges
  • 2 cups mixed berries fresh or frozen
  • 1/2 cup reduced-fat Greek natural yoghurt
  • 1 tsp vanilla extract

Instructions
  1. Zest the orange, then slice off the remaining peel and discard. Cut the flesh into segments.
  2. Place the orange zest, segments and any juice from cutting the orange, into a saucepan with the berries over a medium-high heat. Bring to the boil and then reduce to a simmer for 10-15 minutes, until liquid has reduced and it is sticky looking. Set aside to cool.
  3. Mix vanilla and yoghurt.
  4. When fruit mix is cool, mix half the yoghurt and half the fruit together.
  5. Then layer this mix with the other half of the yoghurt in a glass, alternating layers until all ingredients are used.
  6. Serve immediately or chill in the fridge for 30 minutes before serving.
